Southern Girl Peach Cobbler

So last year I spent countless hours working on a peach cobbler recipe for a friendly head to head competition similar to Bobby Flay's Throwdown on who had the best peach cobbler. We even had a panel of judges also known as our best friends who tasted our cobbler and while my friend's cobbler was great, they declared me the winner.

And here is the winning recipe

  • 6-8 peaches peeled and sliced
  • 1/4 cup of bourbon (feel free to use more if you want)
  • 1tsp of cinnamon
  • 1/2 cup of sugar (I used half white sugar and half brown sugar)
  •  1tbs of lemon juice
  •  2tbs of corn starch
  •  1tsp of pumpkin spice
  •  a dash of ginger
  • 2 tablespoons of butter
  • Preheat oven at 350 degrees
That's for the peaches, let them soak/sit while you prepare the dough (recipe below), then baked just the peaches in oven for 10 minutes with 2 tablespoons of butter on a baking sheet or in a pan.

Then for the dough:
  • 1 1/2 cups all-purpose flour
  • 1/4 cup of sugar
  • 1tsp of cinnamon
  •  2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 12 tablespoons (1 1/2 sticks) cold unsalted butter.
Cut the butter into the flour mixture. And spoon fulls of the dough into the hot peach cobbler mix bake 45 minutes. Add vanilla ice cream or cool whip for perfected southern dish!
